If you were to run the VM in "bridge" mode, then DHCP requests and responses would make it out of the VM into your host network, which could cause trouble if that is not what you want.

[http://www.xenserver.org/ XenServer] by Citix is a powerful opensource hypervisor that can work well. Citrix does limit many of their features to the command line when using the opensource, free version. However, the management console is excellent and the product works on a wide variety of hardware.
